Couch Cake recipe

Here is the recipe for my famous couch cake, both in english and swedish! the measurements are metric but can be very easily converted to the american measurements! the swedish version will be posted in a separate post.


This is a interpretation of the typical swedish "princess cake" ¨, spongecake with marmalade and vanilla cream filling covered in whipped cream and marzipan






Cake Bottom
100g vegan butter 
200ml riceflour
100g sugar
150g potato flour
3 tsp baking powder
1 tbsp vanilla sugar + 1 tbsp vanilla essence for extra taste if desired
5 tbsp apple puré ( can be substituted with banana puré but apple puré should be ok for IBS stomachs)
100ml hot water

Filling: strawberry marmalade with vanilla cream, both were store bought. Used alpro whipped cream as you can get a rather thick consistency 

Instructions:
Put the oven at 175° and add roughly a tablespoon of butter in the cake form of your choice, its good to pick a cake form that is a little dee, mine was 20cm in diameter. Put the form in the oven. Mix together the dry ingredients in a bowl and in a separate one mix together melted butter, puré and hot water, whisk for about 2min. Add the dry ingredients and mix until there are no bubbles left in the mixture. Take the form out and add the shredded coconut or crumbs and cover the form sides with it, Add the excess bits to the mixture and pour it in the cake form. Put the cake in the oven for 30min, check if its cooked by poking with a fork. Once done, take it out and let it cool. 

Assembling:
I used this diagram as a base. Cut out a rectangle/ square out of the circle, depending on how you want your sofa to look like. Cut out the backside, with the arms. Once youve cut out the parts, divide them into 2. Add the marmalade and vanilla filling between each layer and use the filling as "glue" when stacking them up. Once youve built your couch, cover it with thick whipped cream. Once done cover the couch with the marzipan and start decorating! 

Tip: Its a good idea to assemble the cake the day before or a couple hours ahead of time so the sponge has enough time to soak up the flavours. You can use sugarpaste for the added decorations.
